Learn through cooking
Recipe by Michael Weldon
Serves: 12 | Time: 20 minutes
Ingredients
- 2 cups pitted dates
- ½ cup water
- ½ cup peanut butter
- ¼ cup avocado oil
- 1 tsp vanilla bean paste
- 2 cups rolled oats
- 1 tbs sunflower seeds
- ½ cup quinoa flour
- ½ cup shaved coconut
- 1 tbs flax seed powder
- ¼ cup raw almonds, diced
- ¼ cup dried cranberries
- Pinch of salt
Instructions
- Cook the dates and water over a medium heat for 5–8 minutes until the dates soften.
- Once soft, blend into a rough purée using a stick blender.
- Add the peanut butter and avocado oil and cook until the peanut butter melts. Remove from heat and stir in the vanilla until combined.
- In a bowl, combine the remaining ingredients. Pour over the warm mixture and mix until evenly combined.
- Press the mixture firmly into a lined baking or brownie tin.
- Refrigerate for at least six hours or overnight until set.
- Turn out, slice into bars or bites and store in the fridge.

Serves: 6 | Time: 30 minutes
Ingredients
- 8 eggs
- 100g tasty cheese, grated
- 1 onion, diced
- 100g peas
- 1 bunch spinach
- 1 bunch kale
- Olive oil
- Black pepper
- Sea salt
Instructions
- Heat a little olive oil in a non‑stick frying pan over a medium heat. Add the onion and cook until softened.
- Add the peas, spinach and kale. Cook until the greens begin to wilt.
- In a bowl, whisk together the eggs and cheese. Season with cracked black pepper and a pinch of sea salt.
- Pour the egg mixture into the pan and cook for two minutes until the base begins to set.
- Transfer the pan to the oven and bake for 8–10 minutes until the frittata is cooked through.
- Remove from the oven and allow to cool before slicing. Enjoy as a snack or serve with a light salad.
